Nancy's Pecan Pie 4
eggs 1 cup brown sugar 3/4 cup light corn syrup
1/2 teaspoon salt 1/2 stick sweet butter, melted 1 teaspoon
vanilla 2 cups shelled pecans, chopped or halved Pie dough (see next
recipe)
1. Preheat oven to 400 degrees. Make the pie dough and
line a 9-inch pie plate.
2. Beat eggs well in a large bowl. Add the
brown sugar, corn syrup, salt, melted butter, and vanilla to the eggs and mix
thoroughly.
3. Sprinkle the chopped pecans in the dough lined pie
plate. Pour egg mixture over the pecans.
4. Bake the pie 10 minutes.
Reduce the heat to 325 degrees and bake for 25 to 30 minutes longer or until
set.
5. Remove from oven and let cool to room temperature before
serving.
Serves 8. |
Nancy's Pie Dough 1
cup all purpose unbleached flour 3 ounces unsalted butter, very cold, cut
into 1/4 inch slices 1/8 teaspoon salt 1/4 teaspoon sugar 5
tablespoons water (approximately)
1. Place flour, butter, and salt
in a mixing bowl. With hands, mix so that butter pieces are coated with flour.
2.
Slowly add water while kneading the dough with your hand. Gather into a ball.
There will be visible pieces of butter in the dough, which will result in a
flaky pastry.
3. The dough is now workable. If over-mixed, place in
refrigerator to rest for approximately one hour. |
